What's an Old Fashioned without a little new twist? This divine cocktail from Half Baked Harvest is nothing short of inspired. It is the perfect fall-winter drink with the spicy cinnamon and sweet persimmon combination. Plus, it's time for toast! Closing out month one of 2018 couldn't be more delicious. Mix up this concoction for a craft cocktail night, or even to use as your signature drink at a winter or fall wedding. 

Spiced Persimmon Bourbon Old Fashioned

Ingredients
Spiced Maple Persimmon Puree
 - 2 ripe fuyu persimmons, chopped
 - 1/2 cup real maple syrup
 - 1/2 cup water
 - 1 cinnamon stick, plus more for serving

Old Fashioned
 - 2 ounces bourbon
 - 1 ounce lemon juice
 - 1 juice from clementine
 - 1 dash orange bitters
 - 1-2 tablespoons persimmon puree
 - Sparkling water, for topping
 - star anise, for serving (optional,  but you won't regret it)

Instructions
Spiced Maple Persimmon Puree
In a small pot on the stovetop, combine the persimmons, maple syrup, water and 1 cinnamon stick. Set over medium heat and bring to a boil. Cook 5-8 minutes or until the persimmons are mushy and have released their juices. Remove from the heat. Next, remove the cinnamon stick and puree the mix. Let cool. The puree will keep for about 1 week, refrigerated.

Old Fashioned
In a cocktail shaker, combine the bourbon, lemon juice, clementine juice, orange bitters, and 1-2 tablespoons of the persimmon puree. Shake to combine. Strain into a glass and top with sparkling water. Garnish with cinnamon and star anise. Serve your personalized wedding napkins or custom home bar cocktail napkins.
