Welcome the first breezes of fall with a refreshing sparkling fig + honey cocktail. Yes, that’s right. Sparkling. Fig. Honey. Cocktail. Fresh figs are only easy to find in local grocery stores at the very end of the summer and beginning of fall, so embrace their short season and whip up this fab cocktail right away!
What You Need:
- 1/4 cup honey
- 1/4 cup filtered water
- 6 figs cut into quarters
- fresh sprig of thyme
- 1 cup champagne
- 1/2 cup high quality apple cider
- 1 ounce orange liquor
What To Do:
Step 1: To make the oh-so-delicious fig and thyme syrup, combine the honey, water and figs in a small saucepan. Bring to a simmer over low heat and whisk consistently until the honey is melted and the figs begin to soften.
Step 2: Add the thyme and let simmer for an additional 10 minutes, stirring often.
Step 3: Remove from heat and let the mixture sit for a few minutes. Remove the thyme sprigs from the honey mixture.
Step 4: Use a food processor or immersion blender to blend the honey and figs into a smooth syrup.
Step 5: Combine the champagne, apple cider and orange liquor in a small pitcher.
Step 6: Add two tablespoons of the fig syrup and stir.
Step 7: Pour into two glasses and garnish with extra thyme and fig slices.
