Hibiscus Mai Tai

Party like a pineapple! Or maybe just bring a little pineapple to your next party. One great way to do this? A mai tai, of course! We certainly like pineapple juice a little more with a splash of rum. This next cocktail pairs the herbal hibiscus tea to give this summery cocktail a floral note. Enjoy!

Hibiscus Mai Tai

 - 2 oz dark or white rum
 - 4 oz hibiscus tea
 - 3 oz pineapple juice
 - 1 oz lemon juice
 - 2 oz simple syrup
 - 5-7 springs of thyme (more to garnish)
 - Pineapple wedge for garnish

First, brew your tea adding a few thyme sprigs as well while the water steeps. Chill the hibiscus thyme tea. Combine the chilled tea, rum, simple syrup and lemon juice over ice in a cocktail shaker. Shake well. Strain over ice into a cocktail glass. Top off with the pineapple juice and a bit of pineapple and thyme for garnish. Pair with foil cocktail napkins so cute, you won't know if guests are asking for a napkin or a drink when saying "mai tai have another?"
